Might benefit from an immersion blender but not necessary.
Chipotle Sauce:
1-2 medium onions
3 cloves of garlic
3 teaspoons of olive oil
1-2 15 oz can stewed tomatoes
3 chipotles in adobo sauce (or an 8 oz can of chopped chipotles)
1.5 teaspoon oregano (preferably Mexican oregano)
1/2 teaspoon salt
Tacos:
1lb or 4 cans cooked white beans (like great northern beans)
Corn tortillas
Cilantro (for serving)
Cotija or feta (for serving)
Minced red onion (for serving)
(grilled vegetables if you are feeling fancy)

Chop up onions and saute in the oil, 4-6 minutes, until translucent and fragrant. Add garlic and cook for 1-2 minutes more.
Transfer half of the mixture to a food processor or immersion blender (or just chop) and add tomatoes, chipotles, oregano, and salt. Puree until mostly smooth.
Add the beans to pan with the other half of the onions. Cook just a couple minutes to warm up the beans.
Stir in the sauce with the beans, onions, and garlic until it thickens up, 4-5 minutes.
Warm the tortillas, arrange the fixings, and enjoy.
P.S.- the site says you can freeze chipotles in ice cube trays. Neat trick. Also, you could do grilled vegetables with this if desired
