For the soup:
1 pound of dried green split peas
1 small onion, chopped
2 medium carrots, diced
2 celery stalks, diced
2 tablespoons olive oil
2 bay leaves
1tsp salt
freshly ground black pepper
6 cups water
For the croutons:
4 slices of sourdough bread, cut into bite-sized squares
2 tablespoons olive oil
4 ounces smoked cheese, such as Gouda or mozzarella, cut into thin slices

Saute the onions in some oil, and place everything besides the crouton ingredients in the slow cooker. Cook for 5-6 hours on high or 8-10 hours on low.
Turn the broiler on.
Mix bread squares with olive oil in a mixing bowl.
Spread out bread slices on a single layer on a baking pan, and put cheese on about half of them. Broil them until cheese is melted. Combine to make little grilled cheese sandwich croutons. (Or, just make grilled cheese and cut it up).
Enjoy.
