
Lemon Garlic Dressing:
2 lemon
1/2 c olive oil
4 cloves garlic
1 tablespoon dried oregano
1 teaspoon salt
fresh pepper
Salad:
2 cups dry lentils
1 bunch parsley
2 pints tomatoes (could probably get away with 1)
1/2 small red onion
4 oz (or more) feta, crumbled

- Cook lentils and drain. While they are cooking, make the lemon garlic dressing. Zest about 1 tablespoon of lemon zest. Set aside. Combine all the other dressing ingredients.
- Chop parsely roughly, cup grape tomatoes in half, and finely dice red onion.
- Combine cooked lentils, parsley, tomatoes, red onion, crumbled feta, lemon zest, and the dressing.
- Serve immediately or refrigerate. Enjoy!
