Marinated Lentil Salad

Lemon Garlic Dressing:

2 lemon
1/2 c olive oil
4 cloves garlic
1 tablespoon dried oregano
1 teaspoon salt
fresh pepper

Salad:

2 cups dry lentils
1 bunch parsley
2 pints tomatoes (could probably get away with 1)
1/2 small red onion
4 oz (or more) feta, crumbled

  1. Cook lentils and drain. While they are cooking, make the lemon garlic dressing. Zest about 1 tablespoon of lemon zest. Set aside. Combine all the other dressing ingredients.
  2. Chop parsely roughly, cup grape tomatoes in half, and finely dice red onion.
  3. Combine cooked lentils, parsley, tomatoes, red onion, crumbled feta, lemon zest, and the dressing.
  4. Serve immediately or refrigerate. Enjoy!
